Full-bodied dry red wine made from grapes grown on sandy soils with iron deposits from the "Le Dome" plot, bordering Chateau Angelus. HEV3 Certified. Manual harvest with low yields.

Winemaking:
The grapes are harvested green in two batches (at the time of setting and at the veraison), which guarantees that only the best are selected, first by bunch and then, after destemming, grain by grain.
Fermentation takes place in wooden vats after cold maceration. The wines undergo malolactic fermentation in new French oak barrels and are aged in barrels in a cellar heated to 18 °C.

Tasting Notes: Deep garnet color. Lovely aroma of red cherries & cassis. Smooth, open-knit style, with notes of plums, cinnamon & mint. Well-balanced and already approachable. Ideal wih roasted lamb.

Robert Parker [Wine Advocate]: "This St.-Emilion (1,000 cases), which has a very high percentage of Cabernet Franc (80%, which is much higher than Cheval Blanc or Ausone) has always been owner Jonathan Malthus's signature wine. The 2012 has a dense ruby/purple color and lots of raspberry and blueberry fruit interspersed with spring flower garden notes, followed by a medium-bodied wine with impressive elegance, purity, and minerality. It's not the greatest wine, but the quality of the fruit, complex nuances, and overall balance make this a very special Bordeaux."
