Grape Variety: 100% Pinot Noir
Winemaking: Fermentation initiated using indigenous yeasts with 40% whole bunch (clusters) to lift the aromatics and give support to the tannins. The 29-day ferment starts with an 8-day cold soak at 7-8 degrees Celsius before a 12-day ferment at 17-33 degrees Celsius. Post-ferment, the wine was left on skins for 9 days at 23- 30 degrees Celsius. Through fermentation, there were 12 hand plunges and 3 pump overs. The wine is matured for 10 months in 18% new and seasoned French oak barriques in order to produce a distinct character of the vineyard.

Tasting Notes: The terroir in a glass - very specific of the place, sophisticated and unique. On the nose, blackberries, spices, violets and wild herbs. Medium body, with an interesting mix of red fruits and salty notes. A complex wine, of great energy, perfect to enjoy today or to keep patiently.

Dave Brookes [Halliday]: “A lovely, savoury, briar-flecked ride with fruit notes of red and dark cherry with some blackberry bass tones. Hints of wild thyme, mountain herbs, wildflowers, dried meats, leaf litter, turned earth and stone. Quite taut and sinewy with a lovely flow and tension then release. Powdery, tight tannins and minerally acidity play their part on the exit, which is complex and stony.”
