Properties: 25 choice ha. on the slopes of Chablis, mainly in the Premier and Grand Cru areas. Average age of their vines: 50 years. Organically farmed, with certification planned for 2023.
Production: 140.000 bottles per year.

Directed by Guillaume Michel, this estate founded in 1850 has always championed very pure and very clean Chablis Premiers Crus, without the use of wood. Discreet in their youth, these wines are built to evolve for ten to twenty years in the bottle.
Guillaume is a clear proponent of a smaller production, manual harvesting and, within the winery, of a slow and low-temperature fermentation; his main objective is to preserve the aromatic crispness of the wines which reflect their origins of his various vineyard sites.
