Information about the winery

The winery is located in the heart of Chablis, where tradition and modernism coexist, they are the image of this family proud of its know-how. 1792 is the date of the first title deed to the Collet house. In 1932 what we call Viñas Viejas today were planted. In 1952 Jean Collet owned 61 hectares of vineyards that he cultivated. He begins by selling his harvest wholesale to merchants. In 1954 he began bottling his wine, and by 1959 he was already exporting his products under the name Domaine Collet throughout Europe. In 1979 Gilles Collet (current winemaker) joined his father and the company was renamed Domaine Jean Collet et Fils.
As an experiment, a plot was designated in 1999 to carry out tests with a 'biological' spirit: exclusively organic amendments, phytosanitary treatments with approved organic products and manual work. Starting in 2018, aware of more responsible agriculture, Domaine Jean Collet et Fils develops organic vine cultivation in a large part of the vineyard and a good number of vintages receive the Ecological Label of High Environmental Value for the 2018 vintage in forward.
There is currently a resurgence taking place in Chablis, where small winegrowers are making extraordinary wines with improved practices, especially in the vineyard. Guilles, the current director of the winery, plays a central role in this renaissance, as a clear defender of smaller production, manual harvesting and, in the winery, slow fermentation at low temperatures with wild yeasts. His main objective is to preserve aromatic freshness and create wines that reflect the origins of their respective "climats". Jean Collet is one of the houses best known for working exclusively with stainless steel fermentation, having abandoned the use of oak in 1980. Its wines reflect pure Chardonnay, without wood embellishment and its buttery and vanilla flavors... flavors that are difficult to find in Chablis.
