Francia / Borgoña / Chablis

Dry, medium-bodied white made from grapes grown in the Vaulorent climat, the only 1er Cru vineyard of Chablis located on the same hill as the Grand Cru sites. Southern exposure at 160 meters above sea level. Clay-limestone "Kimmeridgian" soil with light brown clay and small pebbles. Presently under conversion to organic cultivation.

Grape Variety: 100% Chardonnay

Winemaking: Spontaneous fermentation with only native yeasts at low temperatures, then maturing in stainless steel for 12 months on its fine lees.

Jasper Morris [Inside Burgundy]: 90-93 puntos

Tasting Notes: Best enjoyed: 2025 to 2030.

Presentation: Cardboard box of 6 bottles.
Availability: Limited. Only 300 boxes produced per year.

Allen Meadow: “An exuberantly floral-suffused nose possesses plenty of classic Chablis elements in the form of iodine, shrimp shell and mineral reduction. There is excellent mid-palate density to the attractively textured medium-bodied flavors that possess both good richness and volume before concluding in a balanced, beautifully persistent and moderately dry finale. This could use better complexity, but Vaulorent typically develops extremely well. "
