Francia / Borgoña / Chablis
Dry, medium-bodied white made from grapes grown in the Valorent climat, the only 1º cru vineyard of Chablis located on the same hill as the Grand cru sites. Southern exposure at 160 meters above sea level. Clay-limestone "Kimmeridgian" soil with light brown clay and small pebbles. Presently under conversion to organic cultivation. 13% vol.
Grape Variety: 100% Chardonnay
Ageing: Spontaneous fermentation with only native yeasts at low temperatures, then maturing in stainless steel for 12 months on its fine lees.

Tasting Notes: Best enjoyed: 2025 to 2030.
